Navratna Korma


Ingredients-

  1. Onion- 1 cup
  2. Potato-1/2 cup
  3. Ginger-Garlic Paste- 1 tbsp
  4. Beans- 1/2 cup
  5. Carrot-1/2 cup
  6. Paneer-1 cup
  7. Green Chilli- 3 no
  8. Poppy Seeds- 1 tbsp
  9. Almonds-10-12
  10. Cashew nuts-10-12
  11. Melon Seeds- 1 tbsp
  12. Curd-1/2 cup
  13. Turmeric Powder-1 tsp
  14. Chilli Powder-2 tsp
  15. Salt- As per your taste
  16. Butter- 2 tbsp
  17. Green Cardamom-3 no
  18. Mace- 
  19. Cloves-3 no
  20. Cinnamon Stick- 1-inch stick
  21. Bay leaf-1 no
  22. Peppercorns- 4 no.

Method-

  1. Slice the onions. Cut the potatoes and carrots into dice/big pieces. Chop the green chillies. Cut the beans into 1/2 inch pieces. Cut the Paneer into cubes.
  2. Put the Poppy seeds, Melon Seeds, Cashew nuts and Almonds in hot water and let it soak for 30 minutes. Grind it into a smooth paste.
  3. Put some butter in a heavy-bottomed pan. Add green cardamom, mace, bay leaf, peppercorns, cloves and cinnamon stick to it.*
  4. Once it crackles, add the sliced onions and cook it till it becomes light-golden brown. Now add Ginger-Garlic Paste and cook till the raw taste goes away.
  5. Add Chopped Green Chillies, Turmeric and Chilli Powder and mix it well.
  6. Now add Curd and the smooth Seeds-Nuts Paste and mix well. 
  7. Once this starts boiling, add the veggies ,1/2 cup water and let it cook for 10-15 minutes.
  8. Then add the Paneer and let it cook for another 5 minutes.
  9. Add some cream on the top(optional). 

Few things to keep in mind

  • Instead of soaking the seeds-nuts in hot water, you can boil it for 10 minutes , let it cool and then grind it.
  • Enjoy it with Roti, Rice or Naan.
