Navratna Korma
Ingredients-
- Onion- 1 cup
- Potato-1/2 cup
- Ginger-Garlic Paste- 1 tbsp
- Beans- 1/2 cup
- Carrot-1/2 cup
- Paneer-1 cup
- Green Chilli- 3 no
- Poppy Seeds- 1 tbsp
- Almonds-10-12
- Cashew nuts-10-12
- Melon Seeds- 1 tbsp
- Curd-1/2 cup
- Turmeric Powder-1 tsp
- Chilli Powder-2 tsp
- Salt- As per your taste
- Butter- 2 tbsp
- Green Cardamom-3 no
- Mace-
- Cloves-3 no
- Cinnamon Stick- 1-inch stick
- Bay leaf-1 no
- Peppercorns- 4 no.
Method-
- Slice the onions. Cut the potatoes and carrots into dice/big pieces. Chop the green chillies. Cut the beans into 1/2 inch pieces. Cut the Paneer into cubes.
- Put the Poppy seeds, Melon Seeds, Cashew nuts and Almonds in hot water and let it soak for 30 minutes. Grind it into a smooth paste.
- Put some butter in a heavy-bottomed pan. Add green cardamom, mace, bay leaf, peppercorns, cloves and cinnamon stick to it.*
- Once it crackles, add the sliced onions and cook it till it becomes light-golden brown. Now add Ginger-Garlic Paste and cook till the raw taste goes away.
- Add Chopped Green Chillies, Turmeric and Chilli Powder and mix it well.
- Now add Curd and the smooth Seeds-Nuts Paste and mix well.
- Once this starts boiling, add the veggies ,1/2 cup water and let it cook for 10-15 minutes.
- Then add the Paneer and let it cook for another 5 minutes.
- Add some cream on the top(optional).
Few things to keep in mind
- Instead of soaking the seeds-nuts in hot water, you can boil it for 10 minutes , let it cool and then grind it.
- Enjoy it with Roti, Rice or Naan.
