Malai Chicken

Serves- 2 people


Ingredients-

  1. Chicken-150 g
  2. Lemon Juice- 1/2 lemon
  3. Salt - As required
  4. Turmeric Powder- 1/2 tsp
  5. Ginger-Garlic- Chilli Paste-1 tsp
  6. Yoghurt- 1/2 cup
  7. Chilli Powder- 1/4 tsp
  8. Cumin Powder- 1/2 tsp
  9. Coriander Powder- 1/2 tsp
  10. Water- 1/4 cup
  11. Full- fat Milk - 1/2 cup
  12. Green Cardamom- 1 no
  13. Cloves- 3 no
  14. Black Pepper- 3 no
  15. Bay Leaf- 1 no.
  16. Kasturi Methi-2 tsp
  17. Cashew Nut paste- 2 tbsp

Method-

  1. Marinate the chicken with lemon juice, salt, turmeric powder, ginger-garlic-chilli paste and Yoghurt for at least 30 minutes.
  2. In a pan , add oil.
  3. Add the dry spices and fry them on low heat till they start crackling.
  4. Add the sliced onions, green chillies and ginger-garlic-chilli paste and saute till the raw smell of garlic goes away.
  5. Then add in  chilli powder, cumin powder and coriander powder and mix it well.
  6. Add the marinated chicken to the pan and saute for 2-3 minutes.
  7. Add water into the bowl in which you did marination, mix it well and then add it to the pan.
  8. Once, it starts boiling, add the Full-fat milk/cream and mix it.
  9. Once, this starts boiling, add the Cashew nut paste.
  10. When it thickens, top it off with Kasturi Methi..
  11. Your Malai Chicken is done.
