Malai Chicken

Serves- 2 people
Ingredients-
- Chicken-150 g
- Lemon Juice- 1/2 lemon
- Salt - As required
- Turmeric Powder- 1/2 tsp
- Ginger-Garlic- Chilli Paste-1 tsp
- Yoghurt- 1/2 cup
- Chilli Powder- 1/4 tsp
- Cumin Powder- 1/2 tsp
- Coriander Powder- 1/2 tsp
- Water- 1/4 cup
- Full- fat Milk - 1/2 cup
- Green Cardamom- 1 no
- Cloves- 3 no
- Black Pepper- 3 no
- Bay Leaf- 1 no.
- Kasturi Methi-2 tsp
- Cashew Nut paste- 2 tbsp
Method-
- Marinate the chicken with lemon juice, salt, turmeric powder, ginger-garlic-chilli paste and Yoghurt for at least 30 minutes.
- In a pan , add oil.
- Add the dry spices and fry them on low heat till they start crackling.
- Add the sliced onions, green chillies and ginger-garlic-chilli paste and saute till the raw smell of garlic goes away.
- Then add in chilli powder, cumin powder and coriander powder and mix it well.
- Add the marinated chicken to the pan and saute for 2-3 minutes.
- Add water into the bowl in which you did marination, mix it well and then add it to the pan.
- Once, it starts boiling, add the Full-fat milk/cream and mix it.
- Once, this starts boiling, add the Cashew nut paste.
- When it thickens, top it off with Kasturi Methi..
- Your Malai Chicken is done.
