Sandwich crémeux aux épinards

Sandwich crémeux aux épinards literally means Creamy Spinach Sandwich. The base of this dish is actually the Creamy Spinach/ Epinards ala creme , a French side accompaniment that is usualy served along with meats , grilled fish, etc. I added a few more ingredients to the classic Epinards a' la creme and used it as a filling for my breads, gave it a nice toast and Voila!
Ingredients
- Bread-16 slices
- Spinach-100 g
- Capsicum- 20 g
- Sweet Corn-20 g
- Chopped Garlic-5 cloves
- Refined Flour- 5 g
- Butter/Oil - As required
- Milk-60 mL
- Cream- 20 mL
- Salt & Pepper-As required
Method-
- Gather all the ingredients. Chop the garlic and capsicum.Cut the spinach in chiffonade cuts/chop them up.
- Take a pan. Put 1 tsp of oil in it and add garlic while sauteing it in between.( Don't brown the garlic)
- Add spinach to the garlic and fry it for a few minutes.
- Now, add the sweet corn and capsicum, salt and pepper and saute it.
- Take out the sauteed veggies in a bowl.
- Make White Sauce.
- Add the sauteed veggies to the white sauce and let it cook for 2-3 minutes.
- Turn off the gas and the add the cream. Mix well.
- Take the slices of bread and spread the Creamy Spinach mixture generously.
- Lightly toast the bread and then serve with Tomato Sauce.
Things to keep in mind
- How to cut Spinach in chiffonade cuts.
- I recommend toasting the sandwich to get better flavour.
- If you want to make your sandwich more flavourful, you can add more herbs or garlic.
